Shuman Produce sent us RealSweet Vidalia Onions to use for some healthy recipes. I was so excited to include my daughter in this review because she loves to cook, and enjoys eating vegetables so this was a perfect assignment for her.  We picked the RealSweet Mediterrean Salad which is a perfect main dish, add some chicken for protein or even beans, or a side dish, even a healthy snack. 
For this healthy recipe you'll need:
1 Medium RealSweet Onion Sliced 
3 cups cheery tomatoes, halved 
1 1/2 cups mozzarella 
1 cup roasted garlic cloves, coarsely chopped 
2 Tbs parsley 
2 Tbs oregano 
1 tsp. onion powder 
1 cup Kaamata olives 
Olive oil 
Balsamic glaze

My daughter truly enjoyed making this dish, I feel if you have your children become more involved with the cooking process they will appreciate the food more, and actually try new things. To quote my 8 year old "I love Art and cooking is like Art, you create something pretty with food!"
